How to choose the right steak

A: Grass-fed beef comes from cattle raised entirely on pasture and tends to be leaner with a more complex, slightly gamey flavour. Grain-fed cattle are finished on corn or soy, producing a richer, more buttery taste and higher marbling. Most premium steak boxes clearly label their sourcing method.

A: For tenderness, opt for filet mignon or ribeye. For bold flavour, go with a strip or T-bone. Flat iron and skirt steaks are great for everyday cooking. If you are buying a subscription box, look for variety packs that let you experiment before committing to a single cut.

A: Marbling refers to the white flecks of intramuscular fat running through the meat. More marbling means more flavour, juiciness, and tenderness. USDA Prime has the highest marbling, followed by Choice and Select grades.

A: They can be excellent value if you eat steak regularly. Most boxes offer restaurant-quality cuts at lower per-pound prices, convenient delivery, and access to heritage breeds or specialty cuts you won’t find at a supermarket.
